your idea of a post-holiday update on LJ is to post a recipe you ate over the holiday!
My boyfriend's mother made this soup Xmas Eve, and we all loved it. We actually added more rice than it called for, making it more a stew than a soup, but it simply made it stretch farther for unexpected guests and be even more filling.

I'll be making a couple of batches of this and freezing them, I think.
Expect more soon, we're flipping through the crockpot recipe book I got her, and copying some of the recipes now. ;-)

It sounds like everything is going so well right now for you. I wish I lived closer as you always seem to make the most yummiest things :)
