Great project idea—the STM32MP1 is a solid choice for exactly that “Linux + real-time” combo. For power, seriously consider using the STPMIC1 companion chip; it handles all the rail sequencing and voltage domains out of the box, saving you a ton of headache. Boot/OS is quite stable, but you’ll need to get comfortable with device trees and the remoteproc framework to manage the M4 core. As for cooling, at 650 MHz and moderate peripheral usage, it usually doesn’t need a heatsink if your layout has decent airflow—but pack in a lot of I/O and it might get toasty. Overall, for “medium complexity,” it’s a great match; just be ready for a steeper learning curve than a plain MCU.
