Wrong UTF-8 chars when changing form entries from Spam to Not Spam

The bug

We have a form (https://galicia.wordcamp.org/2025/a-tua-academia-online-baixo-a-lupa-consultoria-expres-con-lua/). Entries sent with this form that go to SPAM are OK with UTF-8 characters. When we mark it as NOT SPAM, UTF-8 chars are wrong.

To reproduce

Steps to reproduce the behavior:

1. Select a form answer with UTF-8 chars marked as SPAM
2. Mark it as Not SPAM
3. See the error

This is unlikely a WordCamp bug, but rather a Jetpack bug.

Unfortunately we're running an old Jetpack version which we can't currently update (As noted in #1520) which means this might not be able to be resolved until we update Jetpack (and if it still occurs, determine if it's WordCamp or Jetpack)

This has been resolved with the Jetpack upgrade, as far as I can tell.

After reviewing the above video, the broken characters appear to be that entries were not being properly slashed upon insert into the database on unspam.

I've tested with Chinese characters and á, é, í, ó, ú

If you wish to test this, you can submit a contact form with the name akismet-guaranteed-spam to trigger it to go to spam.
