Bakin’ With Bacon, The King and an Assistant Chef!

It’s bacon time again and we have a repeat GUEST Chef!

You recognize of course beautiful Katie – she’s a frequent flyer here on the airplane to paradise we know as BACON!    Katie brought a really great recipe for something that’s really quite easy to make and tastes like a little bit of heaven.     I’m so happy to have her here in the royal kitchen again to help show all of you just how EASY this recipe is to make and how NICELY it satisfies your “cravin’ for bacon” !

Bacon Cheese Bread

 

INGREDIENTS

12 bacon strips, diced

one loaf (1 pound) frozen bread dough, thawed

2 tablespoons olive oil, divided

1 cup shredded part-skim (or regular) mozzarella cheese

1 envelope (1 ounce) ranch salad dressing mix

 

DIRECTIONS

In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels.  Roll out dough to 1/2-inch thickness and brush with 1 tablespoon oil.    Cut into 1-inch pieces and place in a large bowl.   Add the bacon, cheese, dressing mix AND remaining oil – – toss to coat.

Arrange pieces in a 9x5inch oval on a parchment-lined baking sheet, layering as needed.   Cover and let rise in a warm place for 30 minutes or until doubled.

Bake at 350 degrees for 40 minutes.  Cover with foil; bake an additional 15 minutes longer or until golden brown.

 

 

Have you noticed we’ve been whipping up quite a few recipes that use Ranch Salad dressing mix?    Well that’s because Ranch and bacon go together like peanut butter and jelly or white on rice (!) or any other pairings you can think of that are just magic.

Katie I think we have another winner here thanks to you – AND since you were anxious to have chunk of this bread when it was done (and so was I!) – how about we enjoy some in the dining room before you hop in your tunnel and head back home?????

Friendly Friday Fill-Ins

Happy Friday!   The sun is shining and even with all the snow STILL on the ground here, we are happier than we were yesterday.    We had a wonderful guy willing to come in the early evening to plow our driveway and get through the coating of heavy ice keeping us from using our snow thrower to get the snow off.    What a wonderful thing to have someone willing to do that after a full day of helping people all over the County to get back on their roads.   School is still out here but next week I’m sure teachers will be giving double homework to make up for it!     WE ARE THANKFUL for the lovely person who put us in touch with him, AND for him as well.   People helping people – that’s a very very cool thing.

Mom and Dad will be heading to the grocery store today………………..we are supposed to get snow Saturday night but only a TEENY BIT – I hope the weather peeps are right!    I miss going around outside to check stuff out.   Meanwhile Mom, Dad and I really are thankful that we didn’t lose power and that we have friends who are so helpful.

1. Wanting to fly my plane is my biggest time waste. (It wouldn’t usually be of course but winter means no flying so why should I make myself miserable WANTING to fly???)

3. The weather heavily influences my ability to go outside for a breath of fresh air and a walkabout.

4. I like to DIY with recipes – I add my own things or not put in things we don’t like – custom cuisine!.

Thankful and Poetic Thursday

Happy Thursday!    We are still stuck at home due to the snow/ice storm we had over the weekend but we ARE thankful that the snowplows did the main roads – – – too bad they don’t do driveways.    We’ve contacted ten companies and not a one has returned our call – THEY ARE BUSY!    The storm we had really was bad because of the ice – not the snow as much as the ice.   SO – here we are – thankful we’re safe and warm but sad we’re stuck.     The only one who isn’t unhappy is me (Teddy of course) because I can still go out on the front porch…….my water bowl Mom keeps out there has been full of ice every time we’ve gone out there but Mom throws out the ice and fills it up with fresh water (of course).    I’m thankful to have efficient water service here at my house (tee hee).   SO – we will be double thankful if the storm that’s coming this weekend skirts around us and leaves us alone – now we know what it must be like living at the North Pole and “it ain’t pretty” (HAHA).     If you want to be thankful – please feel free to click the badge above and let Angel Brian know what you’re thankful for!!

Happy Poetry Thursday!

Well there’s no snow where I am here at the Rainbow Bridge but I wish I could help my brother Teddy and my Mom and Dad with their problem of being stuck in the house.   At least they have heat!     Anyway, I’ll cheer everyone up with some poetry.   You know what we do here on Thursdays – we get together to read each other’s poems that we wrote in the week since we last met…..we base those poems on a photo that I supply.   AND WE HAVE FUN!

“The Mirror Me”

Aging is inevitable I can’t deny

But it doesn’t change what I see with my eye

Inside I’m young and have memories of my youth

I see myself as young – and that’s the honest truth

The years take their toll, that can’t be set aside

But the image I see in the mirror shows I feel inside…….

Humans think a lot about aging and “what’s next” which those of us at the Rainbow Bridge can identify with AND know the answer to.   But through the aging process which is inevitable, if you have a young heart you FEEL young.    May that never go away.     Now, how about I show you the fun photo I found for us to use for next week?     AND if you wrote a poem for the above photo – let us know in my comments please and give us your link so we can read it!  (or you can write your poem in my comments) !!

SPARK(s) on Monday

As you all know, “SPARKS” was started by Annie McGuffy of McGuffy’s Reader but ended when she stopped blogging some time ago. It was meant to be a way to start out each week with a meaningful thought – something that spoke to each of us and hopefully everyone else who reads it. Although Annie isn’t currently blogging,  a lot of us who enjoyed her SPARKS decided to keep posting SPARKS of our own.    Feel free to join us even if this isn’t a Blog Hop – SPARKS are fun to find and share and think about and the more the merrier.  Just post a thought on Mondays – call it your SPARK – and perhaps your “followers will follow” !

Today I’m doing something I’ve not done before – I have TWO SPARKS!!    Yes – one of them (and I’m sure you know which one) I picked not just for the cozy message but the fact it mentions one of my favorite things – a cat curling around my legs (which is a cat hug).    The other also has a wonderful message so I decided to post TWO Sparks this Monday.

Ms. Woodward’s quote is SO TRUE……when we get a snow EVERYTHING changes – our routines, all our plans – everything!   And the other quote makes my heart happy because comparing snow flurries falling to cats winding through legs is a “cat classic”.  See why I just HAD to have two today?

Here’s the photo Mom took of me yesterday – in the morning after Mom gets to the computer and I’m still “Mr. Sleepyhead”, I come into her office and always ALWAYS put my paws around her foot.   Why?   Who the heck knows…..just my way of saying “Morning Mom!”.    She pets me and sometimes I put my fat  little head on her slipper and go to sleep.    Did I hear you say “Awwwwwwwww!” – well Mom thinks its sweet of me to do that so she likes it.
