Denise kindly shared
a recipe for her mushroom egg bake. I immediately set about making it as I had some leftover mushrooms already cooked up. Denise's recipe makes 4 ramekins, but 6 seemed to work well enough for me. It is an attractive, tasty dish.
preheat the oven to 350F (I have a hot old oven)
six 4" ramekin bowls
1/2 tbs butter
2 c sliced cooked mushrooms
3/4c milk
salt
pepper
1/2 tsp dried oregano
1/2 c shredded mozzarella cheese
Instructions
butter the ramekin bowls
whisk 6 eggs in a bowl with milk, salt, pepper, oregano
build each ramekin bowl with mushrooms, shredded cheese and an equal amount of egg mixture poured over top
Place the ramekins on a tray lined with parchment paper. Bake 20 mins at 350F until cooked. Mine slid easily from the bowls.
