
Panagiotis Kefalas was born in Mytilene, Lesbos (Greece) on the 15/12/1960. He studied Chemistry at the Kapodestrian University of Athens. After a year of graduate study and teaching assistantship at Brown University (Providence, RI, USA) he joined in 1984 the “Institut de Chimie des Substances Naturelles” within the “Centre National de la Recherche Scientifique” (ICSN/CNRS) in Gif-sur-Yvette in the Parisian region (France) as PhD student for “Université Paris XI, Orsay” Under the direction of Prof. Henri-Philippe HUSSON he worked on the synthesis of polyhydroxylated indolizidines (precisely on Castanospermine analogues), which manifest anti- HIV activity.
After his military service he joined again the ICSN/CNRS for a two-year Post Doctoral position with Dr. David GRIERSON, Directeur de Recherche-CNRS. He continued to work in the same stream for the synthesis of anti-HIV indolizidine compounds. In Feb. 1992 he joined VIORYL SA in Athens as R&D scientist where he worked on the synthesis of various pheromones, as well as flavours and fragrance compounds. During the same time he got involved, as well, with a project of the company on the isolation of added value products (antioxidants) from the agro industrial waste of the orange and wine production.
Since Dec. 1996, he works with the Mediterranean Agronomic Institute of Chania (Crete, Greece) as Director of the “laboratory of Chemistry of Natural Products and Analytical Chemistry” and coordinator (since 2001) of the department of “Food Quality Management”. His axes of activity are: Isolation and identification of natural products, exploitation of agricultural waste, development of new techniques for the evaluation of antioxidant activity (for which he works a lot with the plateau and enzyme-free chemiluminescent model) and fingerprinting for the identification of products of specific origin (wine, honey, olive oil, herbs etc).

Born in 1970, she studied Biology at the Aristotle University of Thessaloniki, Greece, and she followed additional short courses on organic agriculture and apiculture. She completed her M.Sc. at the Mediterranean Agronomic Institute of Chania, where she has been working since 1998 as Research Associate in the Dept.of Natural Products and in the Dept.of Food Quality Management. She is Ph.D. Candidate at the School of Agriculture of the Aristotle University.

Born in 1974, in Xanthi, he studied Œnology & Beverage Technology at the Technological Educational Institute (T.E.I.) of Athens. In 1996, he followed the European Post-Graduate Programme in Œnology, at the University of Burgundy (Dijon, France), and carried out research project in the Department of Biotechnology, Vioryl S.A., in Athens.
In 1997 he joined the Biology Division (formerly Department of Agricultural Sciences) of Imperial College at Wye, and carried out a PhD in Food Chemistry.
As a post-doctoral researcher, we worked in the Department of Food Quality Management & Chemistry of Natural Products (M.A.I.Ch.), the Department of Œnology & Beverage Technology (T.E.I. of Athens) and the Department of Nutrition & Dietetics (Harokopio University, Athens). During the period of 2003-2005, he was employed as a Research Associate in the Institute of Vine & Wine (National Agricultural Research Foundation, Athens) as an Adjunct Professor in the Department of Œnology & Beverage Technology (T.E.I. of Athens) and as a Visiting Adjunct Professor in the Department of Food Quality Management & Chemistry of Natural Products. In 2005, he joined the Department of Food Quality Management & Chemistry of Natural Products as Senior Research Scientist.
