Buttermilk Pumpkin Bread Gluten Free

3-1/2 cups gluten free 1:1 flour
1-1/2 cups sugar (brown or white, or combine)
2 tsp baking powder
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
3/4 tsp fine sea salt
4 eggs beaten
1 cup buttermilk
1 can pumpkin puree (15 oz)
1/2 cup vegetable oil
1 tsp vanilla

BERJAYA

Recipe makes two loaves. Mix dry ingredients in large mixing bowl. In a separate bowl add beaten eggs, buttermilk, pumpkin puree, vegetable oil, and vanilla. Whisk till well blended. Preheat oven to 350 F. Add wet ingredients to dry and stir till well blended. Place in two 9 x 5 inch greased loaf pans lined with parchment paper. Let batter sit till oven reaches temperature. Bake for 50 minutes. Watch closely the last 10 minutes so bread doesn't become too brown. Bread is done when toothpick inserted comes out clean. Cool on baking rack for 15 minutes, then take bread out and place on the rack to cool completely. One loaf can be frozen. This bread is hearty and delicious. Enjoy !

Fried Frog Legs with Orange Dipping Sauce

Soak frog legs in buttermilk for 2 hours or overnight. Drain frog legs and pat dry and let come to room temperature. Dredge frog legs in flour by placing flour in a baggie, add frog legs, seal and shake till coated. Take frog legs out and let sit single layer till flour is absorbed.

While frog legs are sitting, start on your orange dipping sauce. Place one cup of orange juice, orange rind, 2 heaping tablespoons of brown sugar, 2 tablespoons of white vinegar, 2 tablespoon soy sauce or amino, 1 tablespoon sesame oil, 1 teaspoon chili sauce or hot sauce, 2 tablespoons orange liqueur, 1/2 teaspoon ground ginger, 1/2 teaspoon of turmeric. 1 tablespoon corn starch mixed with cold water, reserved. Put all ingredients in small sauce pan and stir to blend, warm then boil for 30 seconds. If mixture isn't thick then add corn starch and stir constantly till thick. Set aside. 

Fry frog legs in hot peanut or grapeseed oil. Serve immediately with your orange dipping sauce and a vegetable of your choice. Was very delicious and the dipping sauce recipe is one to keep for future use. Enjoy !

Smoked & Marinated Frog Legs

Smoked & Marinated Frog Legs 

Imagine my chagrin when I open my thawed frog legs and see the spine connected to the legs. There's no graceful way to separate the legs since the spine is in the middle, so I'll marinate and smoke them whole. Don't be squeamish these are just like eating a chicken leg or back.

First I soak the frog legs in buttermilk for at least a couple of hours to take away any muddy taste. I'll make a marinade to be sure they don't dry out.

I whisk honey, balsamic vinegar, rice vinegar, Worcestershire sauce, brown sugar, sweet habanero sauce, brandy, thyme, cinnamon and nutmeg together. I let them marinate for one hour in a plastic bag refrigerated. Next I take them out of the marinade and let them sit at room temperature for 45 minutes. Then I brushed them with a sauce and put them in the smoker for 40 minutes. But they weren't cooked through so had to put them in the oven and I put more sauce on them. All that work and they were dry and not that tender. Back to frying them. Not everything I make turns out. Live and learn.
