SPARK on Monday

Happy Monday!    SPARK time…………….“SPARKS” was started by Annie McGuffy of McGuffy’s Reader but ended when she stopped blogging some time ago. It was meant to be a way to start out each week with with a meaningful thought – something that spoke to each of us and hopefully everyone else who read it. Although Annie isn’t currently blogging, a lot of us who enjoyed her SPARKS decided to keep posting SPARKS of our own.

I had a tough time choosing a SPARK for this week…………I found so many that really SPOKE to me.    Since I had to choose one, this is the one I chose……It reminded me of a time in my life where I was “forced” to change.   I thought changing would be a horrible experience but instead it put light back in my life when I thought I’d never have it again.

Sunday Selfie Hop

YES it’s that time again – Sunday and Selfie Hopping.    This morning if you’re a little blurry eyed it may be because of the time change – we all lost an hour during the night.   BUT if you’re like me, you get up and go to bed whenever you feel like it so the clock “matters not” !!    Anyway, our thanks to The Cat On My Head for hosting the Selfie Hop.   If you want to join you can click their badge above and link up!

I have another FLASHBACK selfie today because this was a super duper busy week for my Mom and Dad and taking photos wasn’t on their agenda.   Too many other things going on so I dug into the photos and found this one to share.

What is this????  Well it’s ME of course and I’m hugging Mom’s foot as she’s sitting at the computer.   When my Mom goes to work at the computer every day, I come in to keep her company for a while……often I fall asleep at her feet and it looks to me from this photo that I was about to do just that when she got sneaky and took my photo.    At any rate, while it’s not a very interesting photo it was taken on March 14, 2020 so just about this time of the year three years ago.

Bakin’ With Bacon and the King

Welcome to my kitchen and the “wonderful world of bacon” !

I’m always on the hunt for some good recipes to share………….always looking and usually finding something that takes my fancy and I think just might tickle your fancy  as well.  This week I have a yummy Southern recipe – great side dish OR whole meal (the Royal Mom says it’s all you need for a meal!).    All I know is it’s delish.   I also must say that if this recipe sounds a little familiar – it might be.    I shared a very similar recipe in 2020 after the Royal Parents had been to an Inn in Virginia and had this so I’m repeating it by special request!

Shrimp and Cheesy Grits With Bacon

 

Ingredients

  • 1 ½ cups chicken broth
  • 1 ½ cups evaporated milk
  • ¾ cup quick-cooking grits
  • ½ teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1 cup chopped raw bacon
  • 2 tablespoons bacon drippings
  • 1 pound uncooked medium shrimp, peeled and deveined
  • ½ cup diced green bell pepper
  • ½ cup diced onion
  • 1 tablespoon shredded Cheddar cheese, or as desired

Directions

  1. Pour chicken broth and evaporated milk into a large saucepan and bring to a boil. Stir in grits and salt; return to a boil. Reduce heat to low, cover, and simmer grits, stirring often, until thick, about 5 minutes. Stir in 1 cup Cheddar cheese until melted. Set grits aside and keep warm.

  2. Heat a large skillet over medium heat. Cook and stir bacon in the hot skillet until crisp, 8 to 10 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Drain all but 2 tablespoons bacon drippings from the skillet.

  3. Return the skillet to medium heat. Cook and stir shrimp, bell pepper, and onion in hot bacon drippings until shrimp are bright pink and no longer translucent inside and bell pepper is tender, 5 to 8 minutes. Stir cooked bacon into shrimp mixture.

    Spread grits into a serving dish, top with shrimp mixture, and garnish with 1 tablespoon Cheddar cheese.

 

Just reading the recipe makes your mouth water doesn’t it!   Yep – same here.    Give it a try.    I think you’ll love it.    My Royal Parents certainly approve!

Friendly Friday Fill-Ins

Here are the four sentences we got from our co-hosts this week – oh – and by the way, this week I filled in ALL the blanks!  My words are in GREEN.


1. Be sure to be good all the time_because Mom told me that Santa Claus watches ALL of us ALL the time!.
2. I would never give anything worse than a little scratch to my Mom – sometimes when she’s brushing me I try to grab the brush and have scratched her accidentally!.
3. I got birthday presents from my Mom and Dad.
4. Just because I am a little larger than a lot of other cats (and some dogs!) doesn’t mean I am too BIG to be my Mom’s “little baby” (so she says!).

So completed fill-ins for one more week!   Thanks to our co-hosts for coming up with a good combo of tough fill-ins and easy fill-ins.    Sometimes I have a tough time filling in the blanks so Mom helps – this week I did it ALL BY MYSELF.
